Ingredients

For the Salad:

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/2 cup mozzarella balls (bocconcini), halved

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro or basil, chopped

Freshly ground black pepper

For the Creamy Dressing:

3 tbsp Greek yogurt or sour cream

1 tbsp mayonnaise

1 tbsp olive oil

1 tsp Dijon mustard

1 clove garlic, minced

Juice of half a lemon

Salt and black pepper to taste

Instructions:

In a large bowl, combine the diced avocados, cherry tomatoes, and mozzarella balls.

In a small bowl, whisk together all the dressing ingredients until smooth and creamy.

Pour the dressing over the salad and gently mix to coat.

Sprinkle with chopped parsley, cilantro, and black pepper.

Serve fresh and enjoy!
