Here’s a delicious Pecan Pie Cobbler recipe — it combines all the gooey, nutty goodness of pecan pie with the comfort of a cobbler. It’s easy to make and perfect for fall or holiday gatherings.

Ingredients

For the base:

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup granulated sugar
  • 1/2 cup whole milk
  • 1/2 tsp vanilla extract
  • 1/2 cup unsalted butter, melted

For the topping:

  • 1 1/2 cups light brown sugar, packed
  • 1 1/2 cups hot water
  • 2 cups pecan halves

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare the batter:
    • In a mixing bowl, combine flour, baking powder, salt, and granulated sugar.
    • Stir in milk and vanilla until just combined.
    • Stir in the melted butter (it will be a loose batter).
  3. Pour into baking dish:
    • Lightly grease a 9×13-inch baking dish.
    • Pour the batter into the dish — do not stir once it’s in.
  4. Add pecans:
    • Sprinkle the pecan halves evenly over the batter.
  5. Add brown sugar and water:
    • Sprinkle the brown sugar evenly over everything.
    • Carefully pour the hot water over the top. Do not stir.
  6. Bake:
    • Bake uncovered for 45–50 minutes, or until the top is golden brown and the cobbler is bubbly.
    • The liquid will thicken into a rich caramel-like sauce as it bakes.
  7. Cool slightly and serve:
    • Let it cool for at least 15 minutes before serving.
    • Serve warm with vanilla ice cream or whipped cream for extra indulgence.

Notes

  • The hot water on top might seem strange, but it creates a caramel sauce on the bottom as it bakes.
  • You can use dark brown sugar for a deeper molasses flavor.
  • Add a pinch of cinnamon or bourbon for a twist.
