This comforting breakfast casserole combines fluffy buttermilk biscuits, savory sausage, creamy white gravy, and scrambled eggs baked into one delicious dish. It’s a Southern-style classic that’s great for feeding a crowd, and perfect for holidays, brunch gatherings, or lazy Sundays.
Ingredients
- 1 can refrigerated buttermilk biscuits (or homemade biscuit dough)
- 1 lb (400 g) ground breakfast sausage (pork or beef)
- 6 large eggs
- 1 cup milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/2 teaspoon black pepper
- Pinch of salt
- 1 cup shredded cheddar cheese (optional)

Instructions
1. Cook the sausage
In a skillet over medium heat, cook the sausage until browned and fully cooked. Remove and set aside.
2. Make the gravy
In the same skillet, melt the butter, then whisk in the flour to make a roux. Gradually add the milk, whisking constantly, until thickened into a creamy gravy. Season with salt and pepper.
3. Assemble the casserole
Cut the biscuits into quarters and place them in a greased baking dish. Spread the cooked sausage evenly over the biscuits. In a separate bowl, whisk the eggs with a pinch of salt and pour them over the sausage. Pour the gravy on top and sprinkle with cheese, if using.
4. Bake
Bake in a preheated oven at 350°F (180°C) for 40–45 minutes, or until the center is set and the top is golden brown.
