Beef and Macaroni Soup is a classic, hearty, and comforting dish that’s perfect for cold days or whenever you need a quick and filling meal. Made with ground beef, fresh vegetables, and small pasta, this soup is easy to prepare and loved by both kids and adults. It’s a delicious way to combine protein, carbs, and fiber into one balanced bowl.

Ingredients (Serves 4–6)

  • 400g (about 14 oz) ground beef
  • 2 tablespoons olive oil or vegetable oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 2 small carrots, diced
  • 2 celery stalks, thinly sliced
  • 1 cup diced tomatoes (or 1 can chopped tomatoes)
  • 1 tablespoon tomato paste (optional, for richer flavor)
  • 1 liter (about 4 cups) beef broth (or water + bouillon cube)
  • ½ cup small pasta (like elbow macaroni or ditalini)
  • Salt and black pepper to taste
  • 1 teaspoon dried oregano or basil (optional)
  • Fresh parsley for garnish

Instructions

1. Cook the Beef

In a large soup pot, heat the oil over medium heat. Add the ground beef and cook until browned, about 6–8 minutes. Drain any excess fat if needed.

2. Add the Vegetables

Add chopped onion, garlic, carrots, and celery to the pot. Sauté for 5–6 minutes, until the vegetables begin to soften and release their aroma.

3. Add Tomatoes and Broth

Stir in the diced tomatoes and tomato paste. Mix well. Pour in the beef broth and bring the soup to a gentle boil.

4. Add the Pasta
