    1. Well this is Paula’s for sure but not true Southern Banana pudding.

      In a saucepan put:
      4 tbsp all purpose flour
      Pinch of salt
      Pinch of nutmeg
      1 1/2 cup of sugar

      Separate 3 room temp eggs
      Save whites for meringue.
      Mix egg yolks with 3 cups of whole milk (no subs)

      Pour wet mixture in saucepan with dry ingredients, whisk over medium heat until custard shows ripples. Remove from heat, add 1 tsp vanilla, set to side.

      In 2 at dish, line with vanilla wafers. Top with sliced bananas. Pour 1/2 custard mixture over bananas;
      Repeat. Top with layer of wafers.

      In chilled bowl beat egg whites with 1/8tsp of cream of tartar (hand mixer works best). Gradually add 1/4 cup sugar til soft peaks. Fold in 1/4 tsp vanilla. Spread over top wafer layer.

      Preheat oven to 325 degrees
      Bake 20-25 mins till meringue is golden brown.
      Cool & refrigerate.
