One of the most important tips when making carbonara (and pasta in general) is to constantly stir while it’s cooking. Doing so will ensure that your sauce becomes rich and creamy. If you stop stirring or don’t do it enough, you may end up with scrambled eggs instead!

  • Parmesan cheese (8 tablespoons)
  • 1 package fresh tagliatelle or linguine
  • 3 egg yolks
  • 1 egg
  • Ground Pepper (½ teaspoon)
  • Baby spinach (8 cups)
